Fall is here and that means people everywhere are craving pumpkin-flavored things. Pumpkin lattes, pumpkin
teas, pumpkin beers--you name it. But for me, pumpkin cookies are the pumpkin treat to beat all pumpkin treats.
This recipe from Food.com is boyfriend (and boyfriend's friend) and parent approved.
I didn't make the penuche glaze, though it sounds delicious, because I didn't have dark brown sugar. Instead I used store bought cream cheese frosting, which worked wonderfully.
As you can see, I made my cookies very "rustic" in shape by just plunking them onto the sheet. I also made mine about twice the size of the cookies in the recipe, though the baking time was about the same. Your baking time may vary, so keep an eye on them.
