In The Kitchen With Impish: How To Make Vegetarian Fried Rice

Fried rice is one of my favorite things to cook. It's super easy and absolutely delicious. I like to use seitan in this dish because it has a great texture and tastes great.

If you've never heard of seitan, it's a wheat protein that's low in carbs and has a very "meaty" feel to it. You should be able to find it in the refrigerated vegetarian/organic foods section of your local grocery store.

What you'll need:

Olive Oil


Peppers, onions and any other vegetables


Soy sauce





Coat the bottom of your skillet with olive oil. Cook some peppers, onion and other vegetables over medium/medium-high heat until they are soft.

Make a serving of rice while the vegetables are cooking. You can use any kind of rice, but I used brown microwave rice for this dish.

Add the seitan to the skillet when the vegetables are almost done, and cook until it's brown.

Turn the heat down to low/medium-low. Add soy sauce by tipping the bottle and pouring the sauce around the pan once. Let the vegetables cook in the sauce for a minute or so.

Add more soy sauce the same way you did before and add in your cooked rice. Mix everything together well.

Crack an egg into a bowl and beat it until the yolk and whites are mixed. Pour the egg into the skillet and stir quickly until the eggs are cooked and scrambled throughout the entire dish.

Add more soy sauce if needed, serve and enjoy!

It's crazy good stuff, Sylvia. It also has a high protein to carb ratio, if you're into watching that kinda thing.
